On Friday I (Elizabeth) came home and straightened up some things and then crashed on the sofa for about 2 hours. John and I then partnered in cooking chicken parmesian for dinner with a strawberry/feta salad and everything tasted yummy. Food from home always taste fresher than from a restaurant...unless its steak or chicken fingers (local restaurents have my favorite steak and chicken fingers).
This morning I went to my school's graduation. It was a very nice ceremony and its always neat to hear the guest speakers. This year's guest speaker was the President of a University and he did a great job. John was at home trimming all of the shrubbery with his new "trimmer" attachment that he got 5 days ago as an early bday present. Our jungle is slowly disappearing and it feels/looks much better.
After shopping at various grocery stores around town for all of the week's ingredients, I enjoyed an afternoon with John reading on the porch. While John was doing yard work earlier, he put some chicken in the smoker. It smelled so good and was delicious for dinner. He smoked 4 of them for 3 hours with applewood chips. Its a tedious process because he began preparing them yesterday. (I think I have sanitized the kitchen counter 3 times since yesterday) You can buy whole chickens at the local meat market and they are so much better than from a grocery store. The taste of smoked chicken is heavenly and the meat contains all of its juice too. While he read the book that he is into, I decided to take a trip to Books a Million and buy a new Karen Kingsbury book. I was excited because I bought her Book One of a new series and its titled Leaving. I am already sucked in and am pretty sure I will finish it by Memorial Day.
